Vegetable Kurma


                     This is a flavorful Mughlai dish..my hubby's favorite...its traditionally, vegetables cooked with onions in a creamy sauce...Its a very delicious dish..& is best served with appam, dosa, chapatti, bread & parathas..

Ingredients

1.Carrot-2 or 3
2.Beans-10 to 15
3.Potato-1
4.Ladysfinger-3
5.Onion-2(big)
6.Coconut-3/4 cup(grated)
7.Nuts-8
8.Green chilly-5
9.Turmeric powder-1/4 tsp
10.Coriander powder(malli podi)-2tsp
11.Tomato-1(small)
12.Garam masala-1/2 tsp
13.Curry Leaves
14.Coriander leaves.(must)
15.Fennel seeds powder(big jeera)-1/2 tsp
16.Oil-3 tbsp


Preparation of vegetables

~Chop all the vegetables(carrot,beans,potato,lady'sfinger) into medium size blocks. If its too small it might dissolve in the curry.
~Slice d onions.
~Pressure Cooker all vegetables & onions with water & salt(3 whistles).
~Open after cooling & drain most of the water..only little water needed.


Preparation of gravy

~Grind coconut, nuts, fennel seeds powder, coriander
powder & turmeric powder.
~Add little water & make it a fine paste.


Final preparation

~Heat oil in a non-stick kadai & add the cooked vegetables with water & tomato & cook for 2 mins.
~Add the gravy paste to it & stir well.
~Add water according to the thickness of the gravy you need.(less watery is opted)
~Add salt & pepper(1/2 tsp-according to taste).
~Add garam masala,curry leaves & chopped coriander leaves.
~Cook for max 15 mins..
Veg Kurma is ready..
